New Potatoes are famous for adding to salads and are delicious in any way of cooking. Do be careful when preparing as washing removes some of the skin and this should be done just before cooking or they will not keep.
Perfect for.... cooking as simply as possible, just add to a salad or on the side with a bit of butter and black pepper.
With thin skins and high moisture levels, new potatoes don't keep as well as more mature potatoes. Keep them in a paper bag in the dark.
